For me it's not that they'll inherently be more likely to break, but rather that they go out of tune too easily; both while playing and on the whole over the course of performing.

I think there's definitely something to be said about that, though I've never really felt a big problem with it - I also play relatively thin picks (0.80 ish), so I've always suspected the slight flexibility on the picks counteract that out-of-tune-ness a bit, as opposed to playing some thicker picks, but it's not something I've explored more deeply. That said, I think it can also be a "choice"/preference that there's a slightly bigger "wobble" right on the attack, in terms of sound, before the string lands in the pitch etc. Something that might be more "stable" with thicker strings - but for me it's always been a sound that I've quite enjoyed.
