Jack, my 15 yr old son made your baguettes today for the first time. He had fun and was promptly at the baking table when the timer went off for the each fold, shape, and final score. He has seen me do it countless times AND today was his turn. I believe he enjoyed today's bread the best. He was proud of the time and effort he put into it. Thank you for all you do!!!

The rare times I have to eat bread out (like at restaurants, etc.), I end up stopping after one bite. NOTHING compares to home-baked!

I was buying flour in the supermarket and a v.young girl was deciding which yeast to buy. I asked if she needed help 'yes' she said ' this is the first time I am making bread, do you have any tips?' (I am 75 so obviously looked experinced lol) I told her that the most important thing she needed was patience, set aside an afternoon and enjoy it. I hope she took my advice, young people today seem to be looking for a quick fix.

@Jay M Errr what? Thought we were talking bread making here. The reason I said SOME people SEEM to be looking etc, is because I belong to a fermenting group and a sourdough group and SOME of the younger members are constantly asking 'can I make sourdough in a breadmaker, I havn't got time to mess about with all that waiting' or 'is there a quicker way of doing this' I do not feel thay my comment deserved a verbal backlash on my generation or my lifestyle, but then I am not going to let that worry me .

I can assure you Jack where I live in S California there no bread shop anywhere that makes a loaf like your podcast.that’s why when you came up on my algorithm I started making a wicked loaf of home made bread.time spent worth every minute.👍 many thanks

You had me all in suspense Jack as to what the question was…but really those that don’t appreciate or understand the time process needed in baking will never ever make a beautiful piece of bread in their lives. Patience makes bakers!

One of my biggest surprises with making bread, is how easy it is (assuming your dried yeast isn't 5 years old and dead, of course). And part of that is that the few hours is often only 15 minutes of work. During shorter downtimes I'm often cleaning up a bit of the kitchen, or unloading the dishwasher, all those little jobs that need doing anyway. And because it's rarely all that time sensitive, that's fine. If my pre-shape gets 20 minutes not 15 before I final shape, that's fine, it'll work just the same. I'm so glad I found your channel early on because of your reminders that it doesn't have to all be perfect to be good bread. Great bread, even.

Well said! 👏🏼 Thanks. I have myself asked that same question myself to others!! 😱😂 On another topic, how long can a starter sleep in the fridge? I haven’t made bread since pre-Covid. My starter was left in the fridge for 3, close to 4 years untouched, not a single feeding. I was going to clean out my container as our daughter had given me some of her starter. Just for fun, I fed mine…. after the second feeding it sprung ti life and doubled in size!! Just wondering how long anyone has “forgot” their starter in the fridge.

I’ve been making bread since I got married over 50 years ago. Through just the two of us to six more. It’s a satisfying thing to do: healthier than store-bought, and there’s love in every slice. When I couldn’t do it, my husband took up the job. The time spent has been minimal - the dough does its thing while you do yours. I don’t even knead mine anymore. Stretch and fold has brought me even better bread than I used to make and saves that one bit of actual work. It’s easier than having a baby, but you still get something everyone loves at the end.

It may take 4 hours, but it doesn’t take four hours of your time. You don’t stand over your dough as it proves; you can do other things and come back later. Bread-making is not a chore, it is a pleasure. Time spent on it is time well spent.

Further to this question. I’ve been using your beginners method trying to get my loaves to even slightly resemble yours. I wondered about the timing for each stage and ask if temperature factors into this. I live on the water near Vancouver and the temperatures are lower here. Should the the 2 hour stages be longer or how can I tell if the dough is ready for the next stage. Thank you.

I can relate to this. Mid July, turning a 1kg flour mix into a loaf & 12 rolls took 3 hours 50 minutes from start to finish. Last week it took 5 hours 15 minutes, as the temperature in the kitchen was 16°C, compared to 26°C in July. The actual time I physically spent making said loaf & rolls was, at most 30 minutes, kneading, portioning & shaping. The result was bread I thoroughly enjoy, tasting better than mass produced & even taking electricity used into account, half the price of shop bought. Who cares how long it takes? Oh & speaking of bread costs: I'm currently in Albuquerque, new Mexico & whilst shopping this morning, looked at bread. It's TWICE the price paid in the UK, with an 800g equivalent supermarket sourdough being $4.99 - not far short of a fiver!!!!

Jack, are you doing this on a green screen? The lighting is off; quite "overbaked" zero pun intended. If so, please don't start using chromakey; your previous 250+ videos (and I've literally watched them all) are so real and natural and authentic. If I'm wrong about the chromakey thing, I'll take it, but something looks off and there's enough cheeseball greenscreen videos out there. BTW, you're such a good teacher, I've learned a lot from this channel.

What people don't seem to understand is that good food takes time to prepare. You either spend the money for someone else to make it for you or you take the time to make it yourself. Such a great way to spend time!

I love this! I would like to add one more thing… the hours in between the actual action, when the bread is becoming bread, are filled with a sense of doing 2 things at once along with the promise and anticipation of homemade bread. I also make more than I need and freeze it because I can’t eat store bought bread anymore. Even though it doesn’t always come out “right” it’s still always better.

I would rather stay home in my cosy slippers and pinny on and spend 30mins hands on making my own bead than walking in the soaking wet rain for an hour to the supermarket to buy it. Even bought a special bread knife now to slice my own and it makes such a difference. Well said Jack 👍

Exactly the words I heard the first time I watched your videos and I was amazed, enlightened and may I say challenged to begin my own bread making journey. This grandma thanks you for giving her the desire to make something as wonderful as bread rather than buying inferior, chemical filled loaves at a store. I absolutely love what you have said in this video. My friends also groan when I tell them how "long" bread takes to make, but I get such immense pleasure out of the process, and I am in love with the results in my finished product. I also love the smiles on the faces of those I gift bread to. Their joy in eating the craft from my hands brings me joy. It's not time wasted, it is time well spent.

It took me 15 years!!! Thank you Jack, you gave me the lesson and patience to make my wonderful starter, and now ,every week, I am baking sourdough or sandwich bread for my family. No more do we buy bread. I've been dreaming if this accomplishment for 15 years, three moves, and now living completely off the grid. Thanks to you we eat home baked bread everyday!!!

Jack: IT ALL DEPENDS ON HOW YOU FEEL ABOUT YOURSELF. Everyday I take two frozen triangles out of my freezer. I let them sit on the counter for about 20 minutes, and then roll them up. I work for about 2-3 hours, and then I put them in the oven. Fresh baked croissants 20 minutes later. It takes me about 2 hours to make a batch of 26, and put them in the freezer.

That's impressive! 9 minutes/day for the frozen dough and 2 or 3 minutes on the day of eating. Totally worth it for fresh croissants! I must do this!

This is spot on Jack and I'm going to be sharing the video with my class. One of the first areas I cover when starting a new bread class is to explain the "time" factor. Go read a book, have a cuppa, do the washing, check out the garden, go get the groceries .... you have "time" to do stuff while your dough is doing its thing. This video was so passionate and eloquent. Thank you!❤❤ PS: Made your Cob yesterday and it's absolutely delicious! I usually make an all white Cob but the addition of the 100g of wholemeal gives an amazing flavour 😋

Bravo! I know that I miss the making of the sourdough on the weeks when I can’t - creation, attention to detail and reward at the end, just a great thing to do with your ‘time’. To those who ask how long did it take me? I’d answer with a question ‘how much of my time?’ ‘Maybe half an hour all told and I enjoyed every minute. How much time passed? Nearly two days, but I didn’t wait in…’ 😊 thanks Jack, for lessons well taught!

Dear Jack, i have not been listening to you fot quite a while, but you were the first home baker who eally gave me the love, enthusiasm and skill to enjoy an succed in baking my own sourdough bread. I started 3 years ago and often bake for people in my own village. I bought the scraper from you which is definitely my favorite because of the shape and the small knife ( forgot the name again). But this video beats everything. It is sooooo good, its full of humor and deep wisdom as I was always aware of in you presentations. But these thoughts are worthy for a lifetime. Thank you. As a visual artist, I sometimes get a similar question "How long did it take to paint that picture?" The painting takes 3 hours. The time for preparing the canvas, sketching or waiting for it to dry between coats/layers, etc. may be 5 days or more. Then you hear "My kid could do that". 😔
