Eden Gebre Egziabher owns and operates Makina Cafe, the first and only Eritrean and Ethiopian food truck in New York City. Driven by her passion for the foods she ate as a child growing up in Addis Ababa, Eden serves Eritrean and Ethiopian staples like injera bread, chicken and beef tibs, misir (spicy red lentils), tikel gomen (cabbage with carrots and potatoes), gomen (collard greens), and sambusas, which are similar to samosas. Eden, born and raised in Ethiopia from parents of Eritrean descent, aims to use Makina Cafe to celebrate her two countries of origin and their cuisines.

She made up that part. There are a lot of women in the food truck/stand/cart business in New York. Of the half a dozen food truck/stand/cart near my office, half are run by women (Halal grill, roast nuts, fruit salad). Look at Munchies' own videos on New York street food, so many are run by women including black women.
@Immortalitation1
@Immortalitation1 4 жыл бұрын
Peizxcv Peizxcv what do you mean “made up that part” lmao, brother if you’re coming from a foreign country and you’re of color, you’re bound to come across difficulties, you can’t just discredit her just because you peak out your office window and see other food trucks run by women. How do you know that they didn’t struggle? You’re tripping me out g.
@Peizxcv
@Peizxcv 4 жыл бұрын
Apilot I am from a foreign country and colored. I see many foreign women running food trucks in New York and this channel also featured many of them. She clearly isn’t the only or the few women of color running food trucks. When she say “people saw a black woman... and expect me to fail” she is just playing “no one expect me to succeed” card

For Example in Oromia they call it Budenna and Laftoo, Somali's call it Canjeroo. So basically now it has become an East African Dish.

The thing is she is Eritrean but her food is mostly Ethiopian (as well as the names of the dishes) inspired. There are many overlaps between the two countries' food but they are not the same. I was initially very confused because her full name is Eritrean but her whole vibe is Ethiopian. It all made sense after hearing her story which confirms the first impression I got off of her. Hats off to her, I am very proud of her. She is paving the way for both groups of Habesha.

I tell you what.. my Eritrean friend once told me we should go and eat this food I told him I'm not sure if I'm gonna like it... He told me I have nothing to loose... Atleast give it a try... We went to an Ethiopian restaurant and boy oh boy the food was banging... I ate to my fill and had to takeout some for later and I always thank him for introducing me to their food... I'm the one asking him now to go and eat Eritrean/Ethiopian food... Zigni and kitfo with injera and malt drink... Epic.🇪🇷🇰🇪🇪🇹

I'm preaty sure there are a lots of people thought about doing this.. Selling Ingera on truck but it's very challenging to do it because ingera or Zebhi is not easy to do it.. it's not like making hamburgers, hotdogs or tacos.. plus you have to be very careful with the ingera .... but good job
