I realize that this is unshielded, but would it be a problem if I use shielded cable or keystones (realizing that they wouldn't be getting any shielded benefit)?

My understanding is that shielded runs need to be grounded, which is what a shielded patch panel accomplishes. Unless each run was grounded separately, the EMI that was "collected" by the shielded cable/keystones has nowhere to go and actually makes the problem worse than if there were no shielded components at all.

Hello CA! You would potentially set yourself up for a problem. As you know, the cable shields would not be able to drain off EMI/RFI/ESD through the keystone hardware and the patch panel frame to ground and therefore there would be no shielded benefit. HOWEVER, in rare instances in certain environments you can actually INCREASE any current issues with EMI/RFI/ESD that you have. In fact, you might unintentionally find issues you didn't know you had as well. Advice: Don't do it.
