As a Louisiana native and resident, yes I know and have eaten beignets. However I've never made them from scratch (I've either purchased them, or made them at home using Cafe Du Monde's Beignet Mix), so I was quite interested to watch the video. I was blown away. This was such a pleasure to watch: your techniques, advice, energy, and personality are wonderful. I'm so glad I watched this video, and plan to watch several more! Your happiness and energy was also contagious, and oh BOY did I need that after this Year of Horrors (a pandemic AND TWO HURRICANES and that wasn't even everything). Maybe I won't crawl back into my hole and hide until 2021 arrives. Or maybe I will. But if I do, I'll make these beignets first and bring them with me into my hidey hole! Thank you, Ro, sincerely. I needed this.

Unfortunately it's tough to make a dough you can roll and cut with most gf flours. The gluten is pretty essential for structure.

Love them, the ones I do are baked. I like to serve them with chocolate, raspberry and caramel sauce. Lemon curd is also good you can use a Piping Bag or a Ziploc and fill them! I made cinnamon an nutella rolls and peach pecan sticky buns yesterday and made four extra batches of dough to give to friends. Also made dinner rolls and I put an extra batch of dough in the fridge.

I tried this recipe last year, and my first attempt didn't turn out well, but I was told to mix some cinnamon in with the powdered sugar before dusting it over the beignets, and it tasted delicious. I would definitely recommend it. :)
