You folks are missing out if you’re not cooking it medium rare. Try it one time and you will notice the difference in the texture of the steak. If it is the redness of the steak that bothers you, try it one time but don’t look at it just eat it and you will notice a difference. I was a well-done or medium well done too until I tried medium rare. A total joy bomb. Holla at me after you try it.

I tried it once and the texture made me so nauseous I couldn't eat steak for months and I'm now vegetarian lol to each there own though!

I like to reverse sear my steaks by putting them in a 200 degree oven for 20 minutes before searing in a smoking hot cast iron pan. It helps make the steak cook equally all the way through.

I have never done this. I just bought a cast iron pan, meat and the igredients ti start this journey 🤣. After you seasoned it thats where you put it in the oven for 20 mins?

@@xr1650 Yes. Season the steak and put it on a wire rack so that the heat circulates around the steak. I use the rack that came with my air fryer.

Overcooked.... cooked all the flavor out of it. Most people have been mistakenly told that red in steak is blood, this is simply not true.

it’ll cool somewhat but this is okay - when you remove it from heat the edges of the steak are much hotter than the center, which causes the muscle on the outside to be relatively “tighter.” this both squeezes the juices out from the edges while cooking and drives the juices to the center of the steak. allowing the steak to rest for around 10 minutes will let the meat at the edges cool down towards the target internal temp (e.g., if you want your steak at 130°F the edges will cool towards that temperature), and the juices will redistribute towards the outside of the steak as the proteins loosen up from the resting.

Looks so delicious. I know this question may be ignorant lol. But when we put some garlic in the pan. How does the flavor get onto the steak since we're only adding it and it's just cooking next to the meat. I know I'm missing something. My kitchen IQ isn't high lol. Thanks if anyone can help

I believe it flavors the butter and then when it's based the butter flavors the steak. And also the aromas.

Since the oil is only going to be used for a quick searing, olive oil would have nothing to do with flavor at this point. I would use a higher flashpoint oil such as grapeseed. You definitely don’t want to see Olive Oil smoking. That’s telling you that all those little bad things are forming such as volatile aldehydes.

I'm not a chef or a cook, but I don't understand why the chefs/cooks always place the steak, after its been cooked, on a cutting board ? All of the juices they all love so much are absorbed into the wood of the board. Wouldn't it be betta to place the cooked meat on a plate ?
