Like most of science it came step-wise. First scientists discovered electron beams in gas discharge tubes and then realized that the electrons came from atoms/ molecules which had developed a positive charge. JJ Thomson devised the mass spectroscope to study these charged atoms/ molecules and found they had different trajectories through electric or magnetic fields - discriminated by their mass/ charge ratio. This was 100 years ago and gave the first evidence for isotopes (20-Ne and 22-Ne). Over a century technology has improved but the principles are the same - ions separated by their mass.

The only video I could find in youtube which actually explains the working concept without showing off there product and bla bla... ICPMS videos are very less . Also video quality could have been a lot better.

What would be the effect of analyzing too many compounds (metals for example)? I've experienced that when too many metals are being analyzed it can lower the signal of each of the metals, but why is this?

I think it depends on the quadrupole. It is limited by the amount of changes of m/z a second. If you are analyzing too many compounds, the right m/z is not often set enough. Many ions won't be stabilized and therefore not reaching the detector

I believe food samples are often digested in a heated mixture of acids, and the final matrix is something like 2% HNO3 6% HCl after diltution. Although, I've mostly seen Mercury analyzed with atomic absorbance instead of mass spec. I'm sure either works fine though.
