Good afternoon friends, I hope you are well! Today I propose my infallible recipe for Carnival "chiacchiere". With a few little tricks you will obtain a puff pastry that makes a thousand bubbles! In the video I propose 2 versions of chiacchiere, both sweet and savory. The first are the classic ones of the Carnival period, but I assure you that even the savory version will delight you and is perfect for your aperitifs or delicious dinners with family and friends not only during the Carnival period.
✅First choose a medium strength flour: you can use 0 flour with 12 proteins or make a mix of Manitoba flour (250 g) and classic 00 flour (50 g)
✅The use of liquor and wine promotes an elastic pastry that will swell during cooking. The alcohol will evaporate during cooking.
✅Another important detail for a puff pastry that makes a thousand bubbles is the folds of the dough: whether you roll it out by hand or with a machine, the puff pastry must be folded several times.
✅🌡it is essential to fry the chiacchiere in NOT too hot oil (the ideal temperature is 180° C)

300 g of type 0 flour with 12 proteins or a mix of Manitoba flour (250 g) + classic 00 flour (50 g)
2 eggs at room temperature
Sugar 40 g
Soft butter 30 g
A pinch of salt
Grated lemon zest
1 teaspoon vanilla extract
30 g of Grappa (or other liqueur or white wine)
