These AI tasks don't require Quantum computing, just a normal table top PC can run algorithms so fast that a simple task organizing some people into right place is no problem. Quantum hardware is not yet ready, only laboratories are studying the possibilities right now. Instead they use hybrid model where Quantum algorithms are run in CPUs.

What is the significance of quantum computing? I understand traditional computing is binary (considering 1 of 2 options), and quantum can consider both options simultaneously), but what does that even mean in practice?

Well, I mean, if you talk about finding the answer to chemical reactions, classical computers can handle the top level overview and possibly down to molecular, but when you get down to the ions and electrons and extreme high frequency of how they move, quantum computers have been the only computers to be able to solve such calculations. That’s why we see such impact when it comes to batteries, electronic innovation, and drug discovery. But there are also massive use cases when you talk about large scale problems, for example climate or financial analysis!
