It's not just a visual aspect to the Epic or Heroic variant. That's a cool part of it but what makes them special is the 10% and 15% extra XP that you get from it per kill.

I have several by now, gotten quite lucky! I have the revised 2 fg 42, the faithful 2 m1903, zipper 2 mg 42, do-re-mi 2 mp40, point blank 2 bazooka, fortitude 2 shovel, bug juice 2 m1a1 carbine and the rookie 2 m1 garand. Also got the Calgary highlanders 2 expeditionary heroic outfit, 25th rifle 2 infantry outfit, and the task force 9 2 outfit for mountain. Thats just heroics! Have about 3 dozen epics so far! Gotten real good loot, although the game slapped me in the face with a heroic dupe yesterday.

Here is a top if you have a locked gun (EX: MP-40) go to zombies (after reaching level 5) and customise the guns like normal, you can see what the gun is supposed to look like and you can use it (only in zombies and a star will still show in multiplayer during class makeing) have fun using them against the horde of undead (I use XBOX of it might not work on steam or PS4 I'm sorry)
