Regarding the "Turtles" (Koopa Troopas) you're actually both right! In some iterations the Koopa Troopas stays in the shell when hit, and in others they are ejected!

The shells are Koopa Troopa’s, you hit them and they retreat into the shell, so yes there’s turtles in there. In Mario kart I’m assuming maybe they are empty? Don’t know for sure. Have you never played, Nancy! 😂

your husband is right on the turtle/koopa coming out of the shell back in the old games u had to stomp him once to have him go inside the shell and then u could kick the shell around the screen

Would it be crazy for me to say ...It seems Nintendo really protects the the Legend of Zelda ..I mean I am always looking for Zelda merch and just can´t find it in stores...I do have a Bokobiln plushy we found on Amazon from Breath of the Wild...and he is so cute..But dang he was not that cheap..Made well ..I think around 25 Euros .. I named him Bob of course..LOL He was what my hubby got me for our wedding anniversary ..LOL We have been to GameStop here in Germany but the merch is so expensive ..ugh...
