Rotisserie Rijsel (Dutch for the Belgian city also know as Lille in French) has become a household name in Amsterdam in just over a year. Conveniently situated in a classroom of a former vacational school Rijsel offers the classic 'ordinary' kitchen. Think of baked potatoes, a chicken from the grill or a steak in red wine sauce and all with high quality. That concept fills up Rijsels dining room twice a night, and no one less than Robert Kranenborg even tips Rijsel for a Michelin star.The most remarkable resurrection in Rijsels kitchen is the Hussar's Salad - better know as the Salade Russe - which is the stopgap in many a salad factory and a prepacked disaster at most petrol stations.
Iwan Driessen, chef of Rijsel, took the hopelessly outdated salad and breathed new life into it. This resulted in an appetizer for which dozens of patrons take a detour daily
