Are there Ubers or taxis that can bring you to/from town instead of the shuttle? Thanks!

There are a few taxis. They wait up near the busses at the cruise terminal. But keep in mind that they get BUSY. The population of Sitka is less than 9,000. Some days there are 7,000 cruise passengers. So demand far outweighs supply. If there's something you really want to see and you need transportation, you probably want to arrange it all in advance. I never recommend Ubers in SE Alaska for the same reason. So much demand, so few drivers. What if there are no Ubers available when it's time to get back to the ship?
