Wish the original game had the hide feature that would allow you to hide by covering behind some object or even introduced stuff like closets.

It used to! There is one particular object called "oPantry", which allows you to, well, hide in a pantry, similar to a closet in a Hitman game. It's still in the game files, which is why some custom levels make use of it. If I had to guess why Hopoo scrapped it, it's because it slowed down the pace of the game (stopping in one spot for a prolonged period of time), and didn't offer much advantage (with the game's AI being what it is). Stealth in this game is always a temporary state before inevitable action.
