I was a chef many years ago, first things first coffee machine on followed by grill. Eating breakfast together before a busy day promotes productivity hugely. Especially to the workers on low wages, they can eat an actual cooked meal at no cost.

Almost immediately, I fell into the rhythm of this video. It is fascinating, to witness in the intimacy of the camera work, what otherwise remains invisible to the customer. There is something truly timeless in the kitchen dance, the preparation, the consistency and the confidence born of a million repetitions, but each one becomes a diner's delight. And the teamwork, effortless, smooth, part of the dance. All this so that a hungry public get to enjoy food cooked and presented with expertise. Which becomes a rhythm of the city. Which becomes timeless and part of our collective culture. Stamped indelibly upon our consciousness, and becomes part of a nourishment that is more than just culinary. I loved watching this. I feel like I could watch hours and hours more - but also this would make for a craving for the food itself that no mere visual tease and temptation can assuage. Thank you for posting this.
