Hi Chef. In the recipe for the salsa two cups of stock are added and simmered for 10 minutes. Once blended the sauce looks thicker than I’d have imagined for that much liquid but no thickening agent. What am I missing?

"Garlic aioli" translates to "garlic, garlic and oil" What you have made there, Señor, is garlic mayonnaise. Tasty to be sure, but not quite aioli.

Hey Chef it would be AWESOME if you had an organic garden in your backyard. I think it would look rad to see you harvest ingredients straight from the garden to the kitchen. I started a huge permaculture years ago and man did it change my life to eat local organic homegrown products. The varieties that you grow in your garden cant be found in groceries, and have unique flavors, texture and nutrient values, making your dishes even better and unique. I also think it would inspire a few people to do the same and eat better in the process, which is so important nowadays. I thought I would share my thought ! Have a nice day.

As an American that’s lived in Spain for four years, they would not use anything close to that amount of pepper or spice. Spanish cuisine is some of the most bland food I’ve ever eaten
