I think guitar solos in these vids are present because the program takes the loudest sounds and isolates them, and that is usually the voices but the guitars reach that level of volume when they play so they are heard

The way these were all made is by lining up the instrumental and vocal versions of each track as closely as possible, then inverting the instrumental track - essentially, subtracting the instrumental from the vocal track, leaving only what's in the vocal version. The guitar solos aren't present in the instrumental tracks, so they appear too! (This is also why the backing music is somewhat more audible in several of them compared to others, as some of the instrumental versions are mixed or mastered slightly differently from the vocal versions.)
