Brings back some memories. Used to drive from south Texas to New Mexico to see a girl. 600 miles one way. Always made sure i went to Jackson bros going through Post. Best pepper jerky you can find. Always wondered were the cut of meat came from. So tender i could have sworn it was loin.

You should try a old meat market called penchorns sorry if I butchered their name but the make about the same thing also cured links of sausage. It is located in Marion Texas between San Antonio and Seguin

I'm not sure this even qualifies as real beef jerky .. it "smokes" for overnight ... sounds more like just cooked meat with pepper on it. ... it's not dry enough nor cooked to a low enough moisture content to be real beef jerky. ... Evidence by the fact it won't keep for a week, they guy has to come back every 7 days. Real jerked beef keeps for months or even years.

@@jeremiahd4054 Yep .. Regular (real) beef jerky (made with with salt and salt peter) stored in an air tight container ... will easily keep for two years ... ad an O2 absorber and more preparation while it's made and it can last 5 years easy
