As someone who made pizza for 2 years in a pretty bustling joint in New York I can already tell you that is going to be 90% dough with barely enough sauce to call it a pizza. More like a flatbread. Also, using a convection roller like that (the oven) means that pizza will never be the same temperature in every area, and will likely be cold by the time it is done on the last side.

Joel H is incredible and practically not human, but as much as he can consume, this would still for sure be a minimum 2 person team challenge even for him. Yes he’s done 28” plus size rounds pies solo that would normally be 2 people, but 8 ft long is a whole other level. His body wouldn’t be able to take it at that capacity.
