The Thai Food Queen of Texas | Street Food Icons

Dee Dee is a Northern Thai Street Food truck located in Austin, Texas started by Lakana and Justin Trubiana. Their menu consists of items like pad kaprow (stir fried pork with fried Thai basil and fried egg), som tom (papaya salad), and gai yang (Thai roast chicken). You won’t be finding any pad thai or fried rice at Dee Dee, as all of their recipes are Northern specialties from Lakana’s home region of Isan.
Lakana and Justin met by chance in Thailand, fell in love, and ultimately moved to Austin, Texas and started Dee Dee. They use Northern Thai ingredients like chili paste, fish sauce, lemongrass, kaffir lime, and holy basil in their dishes. The result is Lakana and Justin’s unforgettable Thai comfort food, where you can taste the love in each bite.

I live in Austin and go to Dee Dee at least once a month. It's hard to express just how incredibly good this food is, and how wildly different it is from the Thai food you typically see in the US. For anyone who's visited Thailand and misses the flavors of the food there - Dee Dee is the only place I've found yet that's at that level.

My grandma was the same and she just recently retired. My grandpa was a GI overseas and brought her home and she worked NONSTOP and it led to her having severe arthritis despite being a really amazing chef as that food peddler in Phuket, Thailand before it became a super touristy area. To this day, she has made the best eggs, the best pad thai, and even served up her dishes to KISS before they became KISS and even the Beatles when they were traveling through Tucson. I don't know why but I always want to cook at home and maybe it's the way we Thai people are brought up to be self-reliant and never eat or buy out because we could do it better for cheaper and healthier.

I think you're reading into it too much. She uses the same tone when she says other foods in English. She puts more emphasis when she names the recipes in her mother tongue. It could be just that she's more comfortable speaking Thai or just that English is boring to her. It could also be that Thai language requires more inflection, whereas the Texas English dialect she learned has more of a slow drawl.

Tofu is used just like any other critical ingredient in Thai cuisine. There are a few types of tofu used in Thai cooking, both *at home* and in the restaurants... *Firm block tofu:* This is used in five-spice eggs, soups and served deep-fried. *Yellow block tofu:* This is used in Pad Thai, stir-fried bean sprout and crispy noodle (หมี่กรอบ). *Tube tofu:* This is relatively new and has pretty much replaced soft block tofu. It is used mainly in soup. There is a version with egg added, which is useful for the elderly and infirm. *Tofu skin:* This is used in soups and stir-fried dishes. *Stuffed tofu:* This is used mainly in noodle dishes.

Alas what a great couple and I can relate having been in northern Thailand. But to have them here in America and thriving is a real joy to see.
