I've been making heaps of your recipes and nearly all have been perfect so far. Thanks so much. Our household in Australia smells like South East Asia LMAO!! I've even bought a big Wok and spent a lot of time seasoning it properly and my god it's awesome!! I got a big 38cm one. Well big for home. I'm next going to get a proper wok burner that puts out enough heat to cook properly.

@QueenGoddessYume5 жыл бұрын
I agree a" couple of minutes " is questionable. I think I'll cook mine on the stovetop. I'll crisp the bottoms and then steam.
@LemLTay5 жыл бұрын
The home-cooked guideline for us would be the wontons are cooked when every wonton in the batch floats. If you're at all unsure, a test dumpling can be cut open and inside visually checked that it's no longer pink, the meat juices run clear and the mince has turned firm and whitish. The timing naturally depends on exactly how much filling goes inside each dumpling and somehow the "cook till floating" seems to work out just fine. I've found that fat, well-stuffed and heavy dumplings seem to take quite a bit longer to cook and float up, and little skinny ones float up real fast!

Thanks! 😊☺️😉 But can I exclude the shrimp for my wonton?
@DayoOgunde5 жыл бұрын
Erlinda Moralde yeah you don’t have to use pork either if you wanna use something else
@LemLTay5 жыл бұрын
Absolutely - leave out the shrimp (prawns) and add something else you like - favourites include re-hydrated shiitake mushrooms, bamboo shoots, water chestnuts. All need to be chopped finely, of course. These will all add texture and interest to your wontons and make them even more home-made. [Sadly, the commercial ones often only use a tiny bit of quite fatty mince and precious little else!]
@712freakinout5 жыл бұрын
Hi Marion! May I ask whether how you cook a dry version of this? What seasonings do you use(e.g. lard oil, fried onions etc) ? Thank you!
@DayoOgunde5 жыл бұрын
Eugenia wouldn’t a dry version just mean leaving the broth out?
@712freakinout5 жыл бұрын
@@DayoOgunde Hi! Normally that's not the case as we still need to flavour the noodles when it's served dry.
@LemLTay5 жыл бұрын
@@712freakinout, you might want to try a mix of thick dark soy, soy sauce, sesame oil, oyster sauce, fried shallot oil and/or garlic oil. Sometimes when one is terribly busy and family members are old enough, the bottles are left on the table and everyone can add what he/she likes and mixes up the seasoning & noodles in their own soup plate to suit their own taste. PS: Sorry to mansplain, but "dry" means the wontons are served in a small bowl with less broth, while the noodles are mixed with the seasoning above and are just slick with the sauces, in the same vein like "aglio-olio spaghetti". After the noodles are sauced, then each serve is topped with slices of char siew (roast pork) and blanched veggies (usually choy sum) and diners enjoy bites of noodles and sip on the soup and slurp the dumplings. Oh, the thought of this is making me hungry!
@712freakinout5 жыл бұрын
@@LemLTay Thank you so much!! Your explanation really helps a lot! Yes it's making me feel hungry too, would definitely add some roasted pork belly(not traditional I know) if I can get my hands on it too!!

@druidboy765 жыл бұрын
Lovely video. But is the dumpling meat cooked all the way through?
@LemLTay5 жыл бұрын
When it floats, it's usually cooked! If one is unsure, a test wonton can always be cut open to see if the inside has gone white-ish and firm and there're no more pinkish meat juices. Then one can be absolutely sure from the timing that it'll cook in x minutes and use that as a guideline for future attempts. But it's always surprising how fast these cook as the filling isn't solid and dense like a piece of solid meat.

Just curious, how can raw pork bones be boiled done in just 20 minutes for it to be safe to consume?
@feverspell4 жыл бұрын
Well, you don't eat them in this soup. You're just boiling them in the chicken stock to put some extra flavor in it. Not to mention, she didn't say when specifically she was going to eat them, just "later." I would imagine if there's still a lot of meat left on the bones (which there didn't appear to be any), she'd cook them further.
