I don't think Karen should have said that, but think about it this way. You're ethically against killing humans so you would call someone a bad parent if they taught their child that that was okay, vegans feel that way in the context of animals. Plants can't think or have conciousness, the thought of them having nervous systems is a pseudoscientific lie. Any actual scientific source will tell you that. While they can respond to environmental stimuli it's not an indication of pain perception and they don't make concious choices like animals do.

They don't even realized that few proteins from a meat cost a lot of protein from plants. If you are very familiar with the food cycle/web/chain you know that if a large population of a certain animal who suddenly change their natural diet would cause an imbalance state in a ecosystem. Also they don't even know that some animal parts/enzymes are used on digital devices like laptop screen , cellphone, camera lenses, etc.
