Personally, I would liquidise the onions and dates in that sauce, strain it to ensure there are no "bits", and then heat it until you get a the creamy consistency you like. BTW I usually soak dried fruit first to get rid of some of the sugary taste.....but then I am British. Any dried fruit would do for this particular recipe.

Thanks for this recipe. I’m going to use it for Pesach. Just an observation. You tasted the gravy using a ladle. You may not have realized it, but you then continued to use this same ladle to collect the gravy without first rinsing of the ladle. Otherwise, your presentation was flawless. Like most recipes where they are braising follow all the instructions up until when they put it in the oven. Instead of putting it in the oven put it in your slow cooker. So, sear the meat and transfer to the slow cooker, sautee your aromatics, add the liquid to deglaze and bring to a boil then add to the slow cooker. Cook it on low until fork tender. I also like to skim fat as it's cooking, but you can do after as well.

You should be able to find it everywhere. Make your own broth with bullion if you can't. It's usually 1 cube to 8 ounces of water.

Merlot, cab, granache or only kosher red wine? No Mogen David or Mannishevitz, nu? Do tannins and sugar matter much? How do you get your brisket so moist without sealing the pan tightly? In my roasting pan, it takes 6 hours at 320° F. The wine would make me sleepy and make me over cook my end cut. Btw, you look great since the baby 🍼.

Great video. I made this the other day and it was DELICIOUS! Even though I cut the (12lb before trimming) brisket into thirds, I was only able to fit two of the pieces in my 5qt dutch oven. Which brings me to my question....could you provide some information about the pan you're using? It looks like a Viking? What size? Stay safe!

My wife made brisket for our evening meal tonight, she ground up several spices and patted the brisket dry with paper towels, she then rubbed the brisket with the spices and it sat in the refrigerator for 24 hours before putting in the oven, four hours later and it was superb.

The problem is that beef broth from the store isn't very good compared to chicken broth: chickens are cheap to process, cows are not, so the stuff from the store often has about an ounce of beef per litre of water. Not exactly 'amazing' flavor. And homemade beef broth is a lot more complicated to make than homemade chicken stock. So we use chicken broth from the store as it tastes better.

I have made beef stock and I have used all the tricks, carrots herbs etc. The thing is that beef bones dont have a nice flavour on their own so you need to mix in chicken bones unless you are working with veal bones and they can be hard to get as the restaurants want them and very costly.

ה ישמור! There is a point and the flat. Those are the brisket cuts. And as for actually cooking it, the best recipe is salt and pepper and smoked with oak wood chunks for a minimum of 9 hours. Cover at 160 °f and remove at 190 to 200. That's it. Anything else isn't brisket. Full disclosure, I'm a Texan.

She never says because she's a terrible cook. For a BUNCH of reasons. She stuck the cold meat against the walls of a stainless steel pan in the beginning and had to scrape it off live. This will ruin your fond because now you have burst crust in the pan after the sear because there's no oil on the sides. She didn't brown the garlic or the tomato paste, she just dumped it into the pan raw. When it came out of the pan it was very stiff which means either it was cold and she threw it in a pan to reheat for filming but didn't' even do that effectively OR she needed far more time in the braise if fresh because it just wasn't done yet. The dates were added in about 4 hours too early. They would be beyond mush at that point. This video is a mess of a recipe. TLDR don't listen to her. There is a reason she has like 400 videos and no views despite the actual decent production quality. SHE CANT COOK. I'm aware it's a 7 year old vid but it's on my feed for some moron reason so yeah. She has a rock on her finger, hope her hubby handles the kitchen.
