I meant anti-air as in shooting down missiles, not aircraft. Being able to shoot down missiles fired by enemies is very important because it allows you to avoid taking a lot of damage.

It's really a tie between the Iver and De Zeven, the developers have confirmed multiple times that these ships are practically even.

As Jedi said, the Iver and De Zeven are the 2 best PvP ships, and are even in terms of their capabilites. At the end of the video, I compare the 2 ships, so you can see which one would fit you better.

I'm not sure I properly understand your question. The controls for sailing a ship are the same controls you would use for any other ship. If you would like to know how to sail in the most effective way, go to 10:21 and listen to the information about wind.
