How do you learn where the maps to know where to cut off lanes? Outside of gameplay?

You want to choose angles that the enemy is unlikely to check. If you are standing right in front of a doorway waiting for someone to come in, they will be likely to see you and might react fast enough to kill you. If you play an "off angle" where you are to the side of the door instead, it becomes difficult or impossible for enemies to clear the room before you get the jump on them. Having the high ground is basically the vertical version of an off angle. Think about where you naturally center when taking different routes, and position yourself opposite those angles. You can consider the amount of cover in the position as well, but don't let good cover make your positioning too predictable.
