I read "Eaters of the Dead" in junior high, and it confused the hell out of me. It really seemed like a historical document, but parts of it were clearly fantastical. (I'm surprised my English teacher didn't catch the connection to "Beowulf"; I certainly didn't!)

Many did not survive. Segregated from everyone else, with bread and water. And if your immune system was strong enough to survive, and you had the energy and wherewithal to drag your ass back to the community, then you earned the right to continue to survive. If one was low-class or a slave and died, they'd be left where they fell indefinitely for the dogs to clear up. Living in close quarters on a ship. Passing germs and bacteria toward eachother friends is actually another way to strengthen your own immune system, actually. Well, also annihilating your friends lives if they can not make it of course. Besides, during early middle ages, the vikings were still a very much a tribal society. There are many tribal society that really had very questionable practices. For example, Austronesian societies of the Indo-Pacific realms who were even more widespread seaferer compared to the Vikings, were very notorious for their very active head hunting activity that very well recorded even in the 20th century. It's a bit depressing when you consider the controversy between those who say "we find all these grooming kits & have records from Christians saying they were so well groomed, they kept stealing all the girls when invited, so our people started stealing their hair styles," & those who follow the claim of this document that they were very dirty, because, generally speaking, if that part with the basin is true, those two statements don't contradict one another whatsoever, unless I am missing something. Viking - yes, Swedish, Finnish, Dane, Norwegian, Polish, Wendish, Lithuanian, Estonian, German, Dutch, Slavic, Belarusian, Bulgarian, Russian, Ukrainian(or Russ) Along with Hunnic, Gothic, and Avars. Parts consisting of Mongolic, Turkish, and other steepe peoples. And more likely due to trade and employment with the Middle East and Byzantium, many other people's. Unfortunately, while he probably had several misunderstandings, a lot seems like it can be gleaned from this. Mentions of the cloak match the style worn in statues of Visigoth Kings, who were originally Germanic & had a nearly identical religion to the Norse. The claims from England of them being exceptionally well groomed & this claim of them all sharing a small basin of water to clean themselves each morning are not necessarily contradictory. Besides, a Christian Monk is probably more likely interacting with Anglo-Saxon nobility, so maybe they were marked by taking a bit better care of themselves, or it's a culture transition thing between Nords & Germans. Like, we know Anglo-Saxon kings wiped their asses with scraps of linen.
