I saw something not quite right... When granny's parents died, they were killed by "kalashnikovs" (or whatever) and we know from the child of slendrina, that seledrina's diary was written in 1892. Since sledrina was a normal girl back then, granny is her grandmother, and kalasnikowv (ak's) are invented around the years 1940', which is way further than the year of her parents death ( which was caused of kalashnikovs)

I'm not sure about the part where Grandpa worked at a bar. In the wiki of Granny Chapter Two it states that Grandpa was a retired War Veteran, considering he owns a helicopter, boat, and shotgun, but I could be wrong. Grandpa overall in my opinion is an interesting character with a protective instinct over Granny. Edit: Funny coming back to this 2 years later but in the wiki when you read under Grandpa's voice lines it says "Grandpa and Granny are probably Swedish, because the developer of the Slendrina series and Granny (DVLoper) is Swedish", I don't know how true this is. Also DVLoper confirmed Grandpa is a retired War Veteran, so thats pretty cool :) I would just consider to believe whatever is canon for now, however this story does make sense.
