I also collect Japanese knives. Think I have over 300 now, and I have been trying to get them all organized on computer. Want to sell some! I have given away many, also "sold" a lot for like 15 cents, to friends and family. Avoid any bad luck that way. I also like my Henckels knives, working on a Zwilling chef knife now. Making new handle, then will sharpen after all that work is done. I am lucky, there are 2 big Japanese 2nd hand shops near here, and I buy my knives there. New deba for $20? Nice old usuba for $10? Love it.

Wait, I thought microfiber was supposed to be good to use on knives to minimize risk of scratching? I use a soft sponge to clean and a microfiber cloth to dry… am I doing it wrong?

Maybe its something like: you get shit stuck in microfiber cloth and it can then scratch knife. I have 33cm Chef knife thats mirror polish and only wash it with hand and single use paper cloths and its not getting scratched.

On super nice polishes, it can create micro scratches that gradually fog up the nice finish. One most knives, totally fine!
