This is one of my favorite channels. I look forward to and never skip watching the videos, and the food grandma cooks always looks delicious. So I was intrigued to discover that there are both domestic and wild cultivars of this plant, Air potato, and that the wild cultivars can be toxic, although the domestic cultivars are edible. Thanks for all your great recipes, grandma. You are clever and resourceful.

That looks lovely! I read that this yam was introduced to Europe after the potato famine a long time ago, so I started to grow them last year. Pretty awesome. No pesticides, fertilizer, or extra water needed. Worried they are toxic? You have to COOK potatoes.

This is a misconception about potatoes actually! The toxin in them is not when they are raw but when they are *green* which is a matter of light exposure and if a potato has gone green no amount of cooking will make it edible (even if you can't see the green after cooking, it can still poison you). You can eat a raw potato just fine, the only thing to keep in mind is that raw potatoes contain certain anti-nutrients which means while they are digesting they prevent you from absorbing important vitamins. So, you can't have them raw as a staple with every meal. Even if you did though it would take months before the vitamin deficiencies expressed themselves. But what grandma is growing here is not a potato (Solanum) or even a sweet potato (Ipomea) but a true yam (Dioscorea) however usually the air bulbils are not edible in true yams! We have 3 Dioscorea species where I am from and none of them have edible air bulbils. This is (as far as I know) a unique property of true yams from Fujian so it is a very exciting local cultivar to see!

I can not find where to buy this type of vine that has yams on it. I love this recipe and they look delicious but I can not find yam seeds/common yam that look like this. This has become my favorite channel. I learn so much from grandma and I think she is amazing.

Never seen such amazing fruit or whatever it is. You are, my dear, capable of making feast out of only one ingredient. I can't find right words to say how delighted I am. In Thailand we eat this yam too. My grandma steam it then peal it and we eat it with sugar :)

It's very much like a potato! The name "Yam Bean" in English usually refers to Jicama, which grows in the ground but has a vine with lots of beans. Fujian Grandma has a video about cooking the Jicama root also. Yeah, they are nothing like beans, but like very rugged looking white potatoes with a very strong skin, covered with little bumps that turn into roots. I grow this in North Central Florida, very carelessly.
