Just a quick bit of info. I grew up in a Commonwealth country, and buying "provisions" is a normal term. After living in the US for many years, I switched to using the term groceries. Provisioning has become groceries for me. Nina's Aussie background may be a factor that term is used? FYI only.

A-hole chefs are so overrated. Running a kitchen is serious business, but you don't have to make everyone miserable to get shit done. More often than not it's just to feed their ego - to feel like the big dog. And guess what? Everything comes to a grinding halt when they throw a tantrum (typically over a small and easily fixed mistake). The best, most efficient restaurants I've ever worked in have a head chef who is calm, cool, and collected... and understands the value of patience. They know that teaching someone how to do something, and doing so as many times as it takes to make them a pro (within reason obviously, sometimes it's a lost cause but that guy's usually on the way out anyway), will be a net positive for everyone.

After spending 3 months on our 36' sailboat in the Bahamas, we came into Nassau for a weather window and supplies before heading over to Eleuthera and Abacos. Imagine my ecstasy when a young woman knocked on our boat - she and her Captain husband were finishing up an owner's yacht cruise in Bahamas and heading to central America for their next gig and she had bags full of fresh produce just flown in from Palm Beach for their 4 day cruise with owner family she needed to clean out. OMG - I had not seen fresh veggies like sprouts and snow peas for months. We were the only boat continuing sailing while others in the marina were heading back to FLA. I took as much as I could handle stuffing the reefer and cooking the rest as we gloomed down on fresh veggies. Love you Chefs!

Great video as always Nina! When I was watching you mark up the items in the freezer/ storage I thought it could be a good idea to also color code the tape/ tag (on the shelf/ baskets). For example; 1 color for guest food and another for crew food (if it's important to separate them for financial reasons). Also similar color code for special foods/ ingredients like gluten free etc, on items which near expiration (within 1 months) and other things which color code which can come inhandy with chef rotating and in a busy environment/ day. Just agree with Dean which colorcode the different things has to avoid confusion. Just some idea that pop up when watching this video. Enjoy your vacation and after that the Med season ❤

FWIW, we always tranferred canned items into reusable containers - same for all packaged goods. Most of items at risk of spoiling were then frozen or kept at lowest possible temp. ALL dry goods were also similary decanted into reusable containers and labelled before stowing. Pros: minimal waste generation afloat as 95% of gash is left ashore for correct disposal, no smelly or bulky waste at sea plus stowage is efficient with no "wasted" valuable freezer space Cons: time spent doing it. Good quality Ruby beer and gin are essential items...well, they are for me
