Moxie Starbuck yeah, that's not what's happening, it would get smaller if it was air escaping from the ice-cream. Reality is pressure on the ice-cream goes away so it no longer is compressed. And at room temperature in a vacuum, water boils with no added heat.

When he was talking about these gums he was referring to how to make dairy dessert more creamy, however if you look closely on the ice cream he is holding it includes the gums he listed to make it more creamy.

ive never seen a square vacuum chamber before. the ones ive dealt with in the past have always been cylinder shaped with a wall thickness at least 3x that than shown in the video. as long as the cube version is safe and effective, thats what matters.

Gases get colder as they depressurize, which is why aerosol air fresheners and deodorants get cold when you use them. So I would imagine the walls of that box get a little cold

Would be interesting to see what happens if you super-cooled the ice-cream under vacuum, attempting to solidify the fats and stuff while in their expanded state. I'd imagine you might get lucky and restoring pressure would keep the structures in inflated, and would only deflate .... when melted. In your mouth.

If he did then he'd know that federal law requires that Ice Cream must be kept at a temperature of minimum -10 because it contains milk which makes it harder to keep frozen and because of how easily dairy products spoil. So with that said, letting that Ice Cream boil and then proceeding to eat it is incredibly stupid because it could actually make you very sick.

You actually want a good about of air in your ice cream. It's what gives it its unique texture. It also makes the ice creams flavours stronger and more intense, including sweetness. This is because foodstuffs that have a greater surface area ration than normals can make more immediate contact with your tastebuds, this is also why shredded cheese taste better than a hunk of cheese.

Another reason the ice cream melted so much at the end is due to thermodynamics. When he let the air back in it created a rapid increase in air pressure within the camber which generates heat

I work in an ice cream factory on the east coast, if we ship ice cream to the west coast it has to travel thru southern Texas to avoid the mountains, as the lower air pressure of high altitudes is enough to cause severe expansion of the product. Ice cream consumed in high altitude locations is actually produced in special factories in high altitude locations to prevent any problems. I heard the story of a new driver taking a "quicker" route through the mountains and when he arrive at the destination the pallets of ice cream tubs had expanded to fill the box truck!

The boiling point of a liquid changes depending on pressure. The lower the pressure, the lower the boiling point is. If the pressure is reduced enough, you can reach what is called the triple point of a substance, which would be an environment where the solid, liquid and gaseous state can all exist together So you could have chunks of ice floating in boiling water..

This is a perfect example of why food is sold by weight, and not by volume. Only drinks that are 100% liquid are allowed to be sold by volume w/o a guaranteed weight. I worked at a Baskin Robbins for like 5 years back in the 80s and I can tell you that almost all ice cream has a huge amount of air that is whipped into it. In fact they add a powdered seaweed mixture to increase the ability of the ice cream to hold air. There is only one commercial brand that I know of that limits the amount of air whipped in, and that is Ben ‘N Jerry’s. Soft-serve ice cream has significantly less air as well. P.S. Ice cream can be sold by volume under certain conditions, like when packaged immediately after being produced, as it is still in a liquid state.

@Fawful The Best It depends solely on the definition of weight. In physics weight is mass and then air in fact weighs something. But I referred to The Action Lab saying "you are only buying half of the weight of this" at 0:35. And this statement is actually wrong. Take the ice cream with air and put it on a scale. Then melt the ice cream and by that let all the air out and put it on a scale again. The ice cream weighs exactly the same according to the scale. So if you are buying 1 liter of ice cream you are acutally not getting 1 liter because the air adds to the volume of the ice cream. However, If you are buying 1 kg of ice cream you actually get 1 kg, no matter how much air is inside the ice cream. Do you now understand what I tried to say?
