So if I have larger structures in the back or further away I still use the exact same vanishing points?

Good question Vanishing Points also change, it’s depend on the structure; The Vanishing Point is where all parallel lines intersect and is always on the horizon line.

What if the larger structure sits past or beyond the horizontal vanishing point where everything has become foreshortened does anything change?

Horizon line remains same but vanishing points change according to the structure It is the spot in an image where all parallel lines converge.
