I can't believe I'm saying this...but my biggest struggle is capturing the gas. I've done the offensively long way of folding over the course of 48 hour's and still couldn't do it. It's delicious, but without the air bubbles it tends to be too dense. I'm trying baguettes tomorrow and will follow everything you've shared. Thank you so much

I'm shocked at the handling of the dough considering it's sourdough! I thought we had to be super gentle at the shaping phase since sourdough doesn't have the additional power during second proofing like commercial yeast? The flattening out of the cylinders almost looks like degassing the dough.
