I think this is my favorite video that you have made yet. So peaceful and you’re so resourceful making that stick tripod for your dutch oven. I so admire your confidence in baking over an open fire! A tip: parchment paper is much easier to handle if you crumple it, then open it up for cutting or placing in your Dutch oven. It lies much flatter without the annoying curling of the edges!

Homemade cookies freeze wonderfully well. Growing up my mom would make big batches and freeze them in foil pouches to put in our lunchboxes. They would be thawed by lunch. Since then I've frozen many kinds it totally works. Yeah, the extra-caramelized peanut butter cookies would be yum. I don't think the reason they spread was cold plant milk, it's either the ratio of ingredients or the oven was a little too cool. The river is so beautiful and the sound so soothing, and yeah, the potential for rises like that is the caution against camping in any waterway basin. Great video and sharing, thank you!

Hi Emi - I watch you and Miss Kitty daily - thank you for allowing us to be part of your life. I have rescued cats for years - and one tip is always have a can of cat food on hand - they can smell it better and will often come up closer to you and stick around for that. Also - did you know Chrome hurt his back ? His last post was 20 hours ago - he was at the shop in a lot of pain.

Hi Emi..I love that you cook over a fire! I’ve done it since I was really young. For the cookies to make them not spread out so much, next time try adding a little more flour. The batter is too soft. Hope that helps!

When I make too much dough for biscuits or cookies, I pat them out and freeze them then bake only what I want to eat. Is your freezer big enough for that? A dipper bird! I love watching those birds!

Cookies do look good even though they are flat ; ). You can bake the cookies in a cake pan in the DO, as there will be better heat control for the bottom. Just like a cake. Oh yes, peanut butter cookies are meant to be eaten right away ; ) consume away 😄
