It is hard work, The cookery course was intense. New taskes and techniques can be draining. Breaking old habit and introducing something new. Organisation is a massive part of being a cook/chef. Marie is on camera for her trial dishes and techniques. We can see that, but Marie is upskilling. Marie is known and trusted and I believe she was supported by the Chateau to go to the next level and through her recent education. Every day with food is an education. If she was cooking on a superyacht. The guests would have to get permission to visit the galley. Marie, you are a great assett. Lancelot loves you and Philip and Stephanie have peace of mind as they travel nationally and internationally.

I feel quite saddened though. Much as his skills are needed with him being the chateau handyman, I feel his talents are somewhat wasted. He is such an amazing craftsman when working with wood yet his talents are not being put to good use. Did you see his parents previous home in the UK? It was AMAZING!

Last week I was at a work retreat and we stayed at a large 14 bedroom house. You can imagine my horror when I saw the microfiber sheets on my bed. That first night was horrible. When I commented during breakfast, a couple people seemed surprised by my comment. When one asked what I would have preferred, before I could respond another coworker blurted out, "Cotton, of course!" We all laughed about it, but I knew I wasn't alone. I decided to keep my criticism of the pillows to myself. I really didn't want to seem like the Princess and the Pea.

​@rayn8740 I would prefer a cotton/silk blend. Cotton is wonderful, I am from the South after all, but the blend is so sweet to sleep in. I don't know why there are not more available. Silk is excellent on its own but the cotton seems to extend the life and stay put better. Right now, linen sheets are all the rage around here, meaning a subtropical island on the Texas coast, but I have not tried them so I couldn't really comment.

Amaury is out of this world in his work. Marie is so talented she shouldn’t doubt herself. Her food look so good I wish we could at least smell what she cooks as I would be in another world of goodness. I think you are doing wedding preparations or the re opening of the chapel. I have so many questions! When will we see Pavlina’s bedroom makeover? Was that the room that Amaury was replastering the ceiling? Did you ever get the updated double glazed windows for Marie’s bedroom and Pavlina’s (and I think there was one more room getting them?) Can’t wait to see Pavlina’s finished room reveal. Or perhaps that was your secret surprise for the Fall- Channel 4? project? What is the scoop about the repairs / renovations of the 2 bedrooms/reconfigured hallway/ new ensuite bathroom(s) over the Grande Salon? Did you ever get the steel beam installed to support the ceiling in the Grande Salon? I would love to hear what is going on with all of that… will you even begin that project before the upcoming Guest season? Such an exciting time for LaLande. And yes, Marie is doing an amazing job creating mouthwatering deliciousness in the kitchen.

In the end it was determined that the steel beam(s) needed to be installed by pros, not by Amaury. She's waiting for a quote from the same company who is doing the chapel and, in fact, expects the same two men who did the structural reconstruction on the chapel to be part of that team. The bedroom and bathroom renovations for the rooms above it can't begin until the beams are in. The rooms Amaury is working on now are the guest bedrooms that will be available this season. Then presumably he will finish the structural work in staff rooms like Pavlina's so they can continue decorating. I love watching the channel but don't envy them having so many moving parts x French bureaucracy x structural surprises at every turn! Nati's apartment ended up mired in bureaucracy because adding a window would change the facade. It's fortunate that she and Amaury wanted their own place so there is no immediate need for the apartment.

Your feast made me think of the latest episode of Jolly, where they go to a Michelin Star place in London called Humble Chicken...among the courses is a Japanese Brioche Bun with a 'pat' of '7 day cultured' butter - but the butter 'pat' encases a layer of chicken liver 'parfait' and a layer of Australian winter truffle - with a bit of parsley. They go ga-ga over it - so I thought I'd pass that on since your palates are so well developed...if it sounds interesting, maybe a 'version' of it?
