Leftover shredded chicken recipes....quick enchiladas-shredded chicken, cream cheese, red bell pepper, jalapeño (if you like spicy), onion, diced green chilies and green enchilada sauce, and shredded cheese, roll up in your tortillas or just layer for a casserole......second quick and easy, egg noodles, shredded chicken, jalapeño, diced tomato, onion, garlic, and I use a mixture of mayo and either plain Greek yogurt or sour cream it makes a good chicken pasta salad
