Homemade Sardines

Here’s another simple and easy tasty recipe, this time we bring you something that delicious but also easy to make, the Homemade Sardines without preservatives.
At room temperature, this sardine will be able to last a day and night. While at the temperature of a refrigerator, it can last 5 to 7 days. And if stored in the freezer, it can last up to 3 months.

Ingredients
The Main Ingredient
* 2 kg of Sea fish, (skipjack tuna or sardines or mackerel, skipjack tuna, Cob etc. … suit to taste);
* 20 to 25 bay leaves;
* 4 segments of galangal, cut into 4 and crushed rough;
* 4 to 6 stalks of lemongrass, crushed rough;
* Enough banana leaves for lining the pressure cooker base.
* Sufficient water until the fish is submerged,
^^ I spent about 1750 ml when I use a pressure cooker and only about 1500 ml if I use a semi-presto pan from Stein Cookware.
* 1 tsp Fine Salt, to taste;
Ingredient for the Fish Marination Seasoning
* 2 limes or lemon, take its water;
* 1 tsp Fine Salt.
Ingredients for the Sauce and Miscellaneous Addition
* 1 tsp salt Fine salt, to taste;
* 1 to 4 tsp Sugar, to taste;
* 1 tbsp Oyster Sauce, optional;
* 1 tsp Broth Powder, to taste;
* 1 segment of ginger, puree;
* Sufficient cooking oil, about 100 to 300 ml for sautéing.
Ingredient for the Mashed Spices/Seasoning
* 1 kg or about 30 medium-sized red Tomatoes;
* a mix of large Red Chili and Curly Chili at 250 gr, suit your taste;
Ingredients for the Finely Chopped Spices/Seasoning
* 1 Onion;
* 200 gr or about 20 cloves of Shallots;
* 50 gr or about 1 hump of Garlic.
