I put a damp paper towel over my leftover pasta when I reheat it in the microwave. It helps to restore the moisture.

@@annamorgan8384 Hi Anna! Depends on what you are making but she eats a lot of pasta so if you don't have a microwave, I would suggest reheating in a small pot/saucepan on medium low on the stove. If you are making something creamy like this and are reheating leftovers, add a splash of milk/heavy cream after it is warmed through.. this is essential to restore the creaminess and minimize the separation that occurs between the cheese and milk/cream. If you are reheating something with a red sauce add a splash of water, stock, or extra sauce (not necessary though because you won't have separation) you can do this at the beginning or once it is warmed through. Just make sure to stir stir stir so it is doesn't separate. Some cheeses like cheap cheddars will get super greasy if it is reheated and it's not fun at all. If you are reheating something like breads or meats, pop them in the oven or an air fryer if you have one. I hate reheating meat because in my opinion it makes it tastes absolutely disgusting, but if I have to and I have left over chicken or beef from tacos, I will put this on the stove on low just to warm it through.

I agree about unnecessary mac and cheese seasonings if you can afford all the diff cheeses that help layer the flavor. But if you only have pre-shredded cheddar and mozz or something then yeah…season away.

Maybe the heat is too high and your sauce is possibly curdling (turn off the heat when adding the cheese)
