I'm loving this daily "real time" sourdough journey! Shea at The Elliott Homestead keeps a "dry" sourdough starter that looks a lot like this. She hasn't done the daily updates so I don't know how it looks along the way but I betcha it's similar. I think it's less waste too. I'm enjoying this so much but don't sweat for us. Come as you are, we're here for the real you and you already know we love you ❤

I am a little odd ballish 😆 I know some may not like the daily updates but i think as we learn, we have to share the entire process. I feel the same way about canning. Bread baking. Cooking. When you edit out failures it robs others in learning. When people skip over steps and edit them out or not film them, and you end up with a different result its hard to learn what happened. I really try to film the way I personally like to learn. I want to see ALL OF IT!!!! Walk me through it! So thats why I include it all. 😆❤️

Thank you for answering the rye question, that was the only thing I was hung up on and hesitated starting this. Did some research about rye at the start and it makes so much sense to build a healthy base. If you measure your dry ingredients onto a paper plate then you can use it as a funnel to empty into the jar!

Sophisticated and Interesting method. I mean no disrespect just providing little information. I make my sourdough with flour and warm water. Let it ferment and preserve it in the fridge to slow fermentation. I feed it daily. This sourdough is alive since 2012 and traveled with me from the Florida Keys to Michigan. When I made it, I learned that there is sourdough alive in Europe since before the 1800’s. The yeast is in the environment and feeds from the flour. Try to make along another one with my very ancient system. This is how bread was made in the past during Biblical times. The system is reliable and very simple. There are variations if one doesn’t want to wait until the mother is ripe.

So mine grew a ton, even though it started like peanut butter. Mine was not super soft, but quite bubbly and smelly (fermented). It is looking good!

So glad you’ve come back to the good ‘ol Sourdough Starter Series! A few months ago, I revisited that page to get your input on your well fermented starters. Tho I did follow yours, sadly after 9 days, was getting no where, and started over and experimented with different values: 1:1:1 and 1:3:3 of Organic Whole Wheat/unbleached AP flour mix. With great success on the 1:3:3, I might add. As the 1 to 1 to 1 ratio was a 24 hour feed VS 1 to 3 to 3, which is a 12 hour feed. I also had the pleasure of finding out that the Rye and Whole Wheat actually needed more liquid (5g) as the higher absorption rate. My most favorite “find/secret” was adding just a few caraway seeds to the All Purpose Flour for a quick rise of the starter before baking! Will be following along to see how all turns out with this books version! 😊 💕

Feeling so badly when I heard you previously say, you lost all of your original starter(s), that, I started back ups! As soon as your starter reaches that ‘oh so perfect fermentation’…….Dehydrate…..as the peak is descending! I dehydrated and then used the Nutra Bullet, making pint jars of each ratio!! 🥰

My question is how many loaves will you get out of this when done? It seems like a lot of work for one loaf. Oh this will be kept indefinitely. So you feed it. It grows. You take some of it and use it for bread or pancakes or muffins or crackers or bagels….whatever you want and the remainder gets fed again and saved. Some starters have been around for over 100 years! Its a living breathing thing! And it can last a lifetime!😆👍🏻 cool right?

The Rye flour is preferred in making starters because it's higher in 'wild' yeast ... by the time you're actually using it in bread (or other) baking the amount of Rye flour is negligible, so you ARE correct.

I have never succeeded with sourdough starter. Maybe that's why it didn't work because I used all purpose. There's a channel called The Bread Code who has sourdough literally down to a science. I will watch and see how it works for you and then I will decide whether or not I want to try again. Or stick with my yeast bread baking! ❤

I use Unbleached All Purpose Flour with bottled spring water. If you are on City water it could have killed your starter. Mine didn't take the first time either but tried again and it worked. After the first 3 weeks I started adding A light rye flour like every 5 feeds. So I go between both Rye and Unbleached All Purpose. I have made bagkes, English muffin,pancakes,naan,quick breads and sandwich loaf sourdough breads. Love it.

I’ve always used all purpose flour & never had any issues with it. I’ve always thought of sourdough as more art than science … probably because the humidity in my air & ambient temperatures in my house fluctuate wildly, but any time I try to be precise with it I have a lot more trouble.

Most folks wont have a double scale like i do so i am using it as one scale. If i used both it would make it harder for people who are really nervous and intimidated to do this to begin with. 😆 things you learn as a youtuber for almost 16 years. I can see the comments before i see the comments. 😆

I wish we could smell it! I have a few friends that keep a Rye Starter & they all keep it much stiffer than every Wheat Starter I’ve ever seen or used. I tend to keep my wheat starter thicker than my dad does, maybe thicker than average, but it’s nowhere near how thick the rye starters are. Does your book say anything about why rye starters are thicker? Also, why would they be better?

I've never heard of a gf sourdough starter, BUT I've also found, that I can eat and tolerate sourdough with no digestive issues like I had with store bought breads. I can even make normal bread with yeast and have no issues. I think it's from all the dang dough conditioners and additives they put in it.

My celiac is so bad that a crumb can send me into 3 weeks of misery so I won’t even attempt trying anything at this point. The last time I was mistakenly dosed at a restaurant I ended up sick for 3 months. Needless to say, I eat at home where it is safe.

You got this! Also i heard sourdough starter discard is healthy for the septic field. Good bacteria. So now i dont feel so bad when it goes down the drain. 😆
