Not correct rafsan has traveled the whole world these kinds of comments are not expected from him. He should know that ingredients availability vary with geography. He is comparing Dada boudi with Sultan. It's the same like comparing Kolkata Biriyani with Khuska (south Indian pulao common in entire South East Asia) or comparing golbari mutton kosha with chuijhal.

আমি কলকাতার কয়েকটি রেস্তোরার বিরানি খেয়েছি।কলকাতার বিরানিতে প্রচুর মাংস দেয় যেটা বাংলাদেশের বিরানিতে নেই।কিন্তু টেস্টের দিকে বলতে গেলে বাংলাদেশের বিরানি অনেক অনেক ভালো।কলকাতার মানুষ মনে হয় ঝাল কম খায়।আমি বিরানি ছাড়াও কলকাতার অনেক খাবার আইটেম খেয়েছি। ভালোবাসা রইল কলকাতা ❤

Briyani was the only thing I used to eat as a kid when I used to come to Kolkata with family. I remember a restaurant called Prince which was good and the prices were quite affordable. The other thing that I absolutely loved about Kolkata was the street food around New Market and the malai curry, which used to be less common in restaurants and households in Bangladesh unless there was a special occasion. The thing that crossed over effortlessly over the years, is the Kolkata kathi roll and several other versions of it that are available in Bangladesh now. The crossover of the Kolkata style chowmein and others would have been great too, I remember being able to eat two plates of chowmein with no trouble.

দুটোর টেস্ট দুরকম। আমি যেহেতু বাংলাদেশী তাই দেশের টা ই তুলে ধরছি। প্রথমত নরমাল বিরিয়ানি,মোরগ পোলাও ,তেহারি,কাচ্চি আলাদা।মাংস আগে রান্না করে তারপর চাল মেশানো হলে সেটা বিরিয়ানি(গরু,খাসি দুটোই হতে পারে),তেহারির প্রসেস টা সিমিলার তবে সেখানে মাংসের সাইজ ছোট ছোট টুকরা করে দিয়ে থাকে(সরিষার তেল দিয়ে রান্না করা হয় তেহারি),মেইন আকর্ষণ হচ্ছে কাচ্চি যেটা কাঁচা মাংসের ওপর ৭০% সেদ্ধ চাল মিশিয়ে তারপর দমে দেওয়া হয় (আবার বলছি,মাংসটা একেবারে কাঁচা মসলাসহ মাখা থাকে),১.৫-২ ঘন্টা দমে পুরো মাটন সেদ্ধ হয় এবং সাথে চালটা ও (কাচ্চি শুধুমাত্র মাটন দিয়ে করা হয়) স্পেশালিটি হচ্ছে এর মসলা যা অন্য কোথাও খেয়ে পাই নি। তারমানে তো এই না যে কলকাতার বিরিয়ানি ভালো নয়। দুটোর মসলা,স্বাদ আলাদা।

আমাদের এখানেই বাসমতী চালের বিরিয়ানি হয়।স্পেশালি কাচ্চিটা।বাসমতী চালের এবং একটু ডিফ্রেন্ট খেতে চায়লে সুলতানস ডাইন, কাচ্চি ভাই এদেরটা ট্রাই করতে পারেন।আমি অবশ্য কখন কলকাতার বিরিয়ানি খায়নিকিন্তু হায়দ্রাবাদেরটা খেয়েছি সেটা আমার খুবই পছন্দের। :-)

@TheLazyBong there is a reason why Bangladeshi people do not like Kolkata biryani. I'll try to be brief. If you belong from a place where the biryani/food is on a spicy side, then there's a good chance you won't like Kolkata biryani, because Kolkata biryani is not a masaledar biryani (same like Lucknowi/Awadhi biryani). So when a Hyderabadi will eat Kolkata biryani, unless and until their taste palette is very versatile, they probably won't like Kolkata biryani. Similarly Dhaka Kacchi Biryani is also very masaledar. That is the reason they don't like the light taste of Kolkata biryani. And Dada Boudi is not "Kolkata Biryani". It's a hybrid of Kolkata and Hyderabadi biryani, and that is why Rafsan said it's similar to Dhaka Kacchi. Kolkata biryani is lighter than Dada Boudi, and the best places to have Kolkata biryani are India Restaurant (Khidirpur), Arsalan, Royal Indian Hotel (Chitpur) Aminia (except Dharmatala branch), Zam Zam, etc.

Bro, first of all kolkata biriyani is not the only biriyani of India as many posts are telling below. Bangladeshis mostly make this big mistake by judging the whole of India by what they see in Kolkata. There are Awadhi, malabar, ambur, hyderabadi and many others. Every biriyani has it's own unique feature, history behind it.

500 gram Kokata er biriyani khete parbi gaa nah guliye. When we first went to Hyderabad we saw freaking huge portion infact double of what Dada Boudi gives. I stayed their for 4 months first I used to think how do they eat so much. But once you taste it you can gulp down even 1kg biriyani alone. Besi ghee, gondho (Gulab, Kewra) khawa jai nah. Okhane regularly biriyani khele o khawa jai but ekhane possible nah. R aminia r Arsalan e chibra mutton dei they are not soft at all. Specifically Aminia jiboneo dekhi ni haar diye mangsho khule jacche.

Bangladeshi biriyani have more flavour and spice incomparison to Kolkata biriyani tried biriyani in both the places,if you like a more sweeter version kolkata is for you meanwhile if you like more flavour Dhaka is for you not to mention they provide more meat pieces too

What kind of topic is this " Why Bangladeshi hate Kolkata Briyani.." brother first of all let me state that "the dish originated in Persia, and was brought to India by the Mughals"...preparation of Biryani have to go through a process with respect and patience" which we all Indian respect and know..adapting the name Biryani to any rice dish does not signifies or justified to call that dish as Biryani...you have to have a proper and royal taste pallet to get the flavor of Kolkata Biryani...comparing Khichdi dish or Pilau dish with " Kolkata Biryani" does not make sense..

I, as a Bong, would choose Kolkata style biryani over any other biryani any day and everyday of the week. Food is all about one's palette and BD people have a different palette. Having said that, while Mughlai cuisine all over pre-partition Bharat was about localised adaptations of commoners food, Kolkata's Mughlai cuisine was of the declining Nawabs, essentially Nawabs of Awadh, having affordability issues but having a Nawabisque delicate and subtle palette, a palette with grace and finesse. One also mustn't forget that foods like biryanis and kebabs are commoners food. Biryani was one pot filling food for soldiers with rice and meat whereas kebabs were essentially dry meat cooked on fire when soldiers had very little water to cook their food/meat.

Shuprobhat Janai Kolkatar Mati theke. I have had the privilege to travel to Bangladesh many times. And I love the Kanchi Biryani, Jali Kebab.....everything ! Biryani is fundamentally a Persian one pot meal for the Garrison. There are core 2 ways Biryani is made. The Kanchi Process and the Pakki Process. Kolkata Biryani, influenced by Awadhi cuisine, is Pakki Biryani and what we find mostly in Bangladesh is Kacchi Biryani. I am not boring your viewers with the process. One can google. Comparison happens when all parameters are same. And Brother, HATE is a strong word to use. Maybe when we are assess food, art , culture etc, we should learn the art of critiquing and not criticising. This helps one to place the facts than getting judgemental......even the difference between critiquing and criticising can also be found on google....Bhalo Thakben....we Indians love Bangladesh. We always did. Even in 1971. God Bless All.
