For the second question, couldn't you use any trig ratio as you know all the sides or do you have to assume that you still didn't know the length of PQ hence having to use tan?

It's because it's the tangent inverse function and not "tan minus one." That verbiage can confuse people. The question to find the angle is tanΘ = (10.3/7.3). In order to find Θ, you have to use the tangent inverse function to find the angle - arctan(10.3/7.3) = Θ. Then you get your degree answer. (arctan is the exact same as tan inverse; I just forgot how to do superscripts lol). Hope that helped!

In your third problem the 98 degrees is irrelevant. To find the bearing to R subtract 55 from 180.
