Most of the dialogue from Season 1, 2 and 3 are very close to the books. So is a lot from Season 4 and 5 too. Season 1 is practically word for word from the first novel. Season 2 & 3 however had a lot more dialogue missing from the books but that was to be expected as the scope of the story grew on screen with each new Season, there was less and less time to focus on every tiny detail, dialogue and quote from the books because that would require 20 or more episodes per Season, which would be insanely expensive and logistically impossible given the limited budget they had to work with in the first seasons before Game of Thrones exploded in popularity and permanently cemented itself into mainstream pop culture.

The seasons get better and better. This is my 3rd favorite show of all time (maybe tied for 2nd) with 2)The Expanse and 1) Black Sails which absolutly nails the landing for it's finale. Black Sails is the only show I've seen that is a literary masterpiece from beginning to the very end.
