Ok theory. SH Tails is altering characters from different parallel universes to create his own universe. He didn’t turn Amy into Sonic’s perfect girl. He turned Amy into his own perfect Amy.

That's my thought as well. Remember SH!Tails is the way he is because Mr.Sega sold the idea of him being Sonic's best friend and his unstable mind took that as reality. It's likely that he also accepts Mr.Sega's story as a whole as the "truth" as it is what his entire life revolves around. SH!Tails likely is planning to collect his own twisted take on the sonic crew, one based heavily on the Fandoms takes on them if what he did to Amy is any indication. So stuff like an Idiot Knuckles or an Edgelord Shadow will likely show up in the future.
