What Kazuma wanted was for Iris to call him Onii-chan but she stops calling him that, instead she calls him Onii-sama. Both of them mean elder/older brother, but onii-chan is a more casual/informal way of saying it. Sebastian is a very common name given to butlers in Anime. That was the joke there.

big brother/elder brother is a pretty common thing to call someone in a few asian countries. its kinda generalized by age groups. pretty much everyone is aunty/uncle/big brother, big sister.

I guess in Japan the more formal you are to someone the more distant in a relationship you are, the more "chummy" you are with someone the more the are open to be more truthful and honest with you, when someone in Japan is overy nice and overly educated and yet over distant with you they are just showing you a fake persona. This is why Kazuma wanted the princess to be more chummy to him. (I think)

The subtitles' translations of 'big brother/elder brother' to substitute Iris calling Kazuma 'onii-chan/onii-san'. In Japanese specifically, calling someone 'chan' shows you've a more familiar dynamic. It's what couples might call each other being cutesy, but it's also what old people call children, or even friends that know each other a really long time will address each other as. It's one of the reasons why Dandadan's translators making it mean 'babe' in the dub was such a bad job.

I admit that sometimes Kazuma makes me cringe when they resort to the typical pervy clichés of isekai. But Konosuba uses this trope specifically to humiliate the protagonist, turning the clichés into a comedic device. In their own way, each girl on the team is there to break or subvert a certain stereotype. Understanding this, I can forgive everything from this group of the four horsemen of idiocy.
