A suggestion from a Toolmaker... Try a fine air blast jet next to the cutter. It will help remove the swarf and stop it binding up. Plastic is tough on tooling because all the heat goes into your cutter. In metal machining a significant amount of heat is dissipated via the base material and the swarf. Warming up the plastic even a few degrees will also help minimise the chipping. Although any air blast or spindle air blowing on it will just cool it again. Warming up some brittle types of plastic is critical, I found this out trimming and installing my first "shower dome". At 15:40, if that's an ER collet you've got the collet in backwards which won't help. I'm unfamiliar with router spindles so feel free to ignore this comment...

You are correct, that collet is in upside down!

At 15:40. Regarding melting. When you use high RPM you need also to have a high feed rate (how fast the axis moves in x/y direction through the material). If the feed through the material is not fast enough the bit does not cut new material for each revolution of the bit, it grinds on the same material instead for several revolutions creating friction instead of cutting resulting in melting the plastic.

Backup those files to two different cloud providers (ie.: Dropbox & Google Drive) and you will be safer than any other home backup system. If you are worried about IP, you can encrypt them on your end, before uploading. Great to see progress and keep up good work !

By looking at your setup, it looks as though your motor mount is a little high on the motor, I would lower it and ad another to the top of the motor. It should make it more rigid.

This should help with the bit tools breaking as well. The way it's holding the spindle is allowing it to climb and bind in the material.
