Lentils really are a hero ingredient for me as they store so well in my pantry & I can pull them out whenever I want to create delicious meals for my family. This soup received thumbs up from the troops as the flavours & textures were just right.
If you’d like to make this recipe vegan or vegetarian, just leave out the chicken & replace the yoghurt with coconut yoghurt and you’re good to go.
