Yet another lucky break of being in the right place at the right time. I was collecting wood from one of our stores around 7pm, and as I came down the hill with the wheelbarrow I saw the moon reflecting on the sea. There was no other vantage point where this could be seen, other than exactly where I was standing. Scott.

I come from the Edinburgh of the south, girdle scones are available in cafes so I've always assumed girdle was the Scots term for a griddle, so many Scottish words have stayed in use in that part of NZ.

Katie films her set pieces herself; cooking, fixing things etc. She's now starting to film the occasional vignettes; views, sheep etc. She also writes and records her own monologues for the history pieces. All of the principal filming and photography has been done by me. I also edit the footage for the episodes and create all of the vlogs. Scott.

Katy get a Motorcycle Helmet. Quads can tip earier than you think. And the first bit to hit the ground is your head n face. Also in the summer they limit the yellow bombers that you get. Nice video the views over the water are fantastic. Bet there are a few that could be pictures for an art collection

You are very right. A motorcycle helmet is on a very long lost of the safety gear we need. We literally need to spend £1000s on protecting ourselves here. But it will all take time to save the funds and buy it. Worth remembering that we have only been here since 1st July. We have to prioritise our monthly purchases in order of necessity. Scott.

Try coating the fire place stones with a mix of Water, Vinegar and a touch of Washing detergent, leave overnight and then wipe off with clean water and a using a thick rag. You may have to do this a couple of times but it works good. Your pancakes were different but I bet they tasted yummy and thats the main thing. Take care 💕🇦🇺

My surname is Gregg. A cousin did a family tree search maybe 15 years ago or more. Mainly Scottish, some Irish relatives and a family coat of arms. If I remember correctly. My maternal side is 100 percent Swede. The paternal side, came over in the late 1800’s and settled in Pennsylvania. Just beautiful where you live, it is somewhat like the Saint Lawrence Seaway in upstate New York along the border with Canada. A multitude of small and big islands dotted throughout the river.

maybe the masons had griddle scones, pancakes or drop scones i think they're called down south, next time try making the batter a wee bitty stiffer, my mum, welsh, used to make welsh girdle scones, similar but with raisins in them, the bottoms cook before they spread too far across the gridle. :)

My Dad was from Scotland and he always called my Mom’s griddle a girdle. Mom made little Scottish pancakes and we buttered them when they were hot and sprinkled them with brown sugar. Yum!! In Australia, where a bunch of the scotch ended up, after the clearances, we call them drop scones. I remember my Grandma making them when we visited. Spread with marge (margarine), I loved them.

Hi Scott & Katie, not sure if you will get this however, your pancake/Scottish drop scone batter is too thin, when you pour it on the griddle it should start to cook and just spread as long as you pour, once you stop pouring it will spread a little bit more then it should stop and start cooking, for griddle scones make sure the batter is thick.

You could make a fruit soda bread on your griddle. Need to use buttermilk with the baking soda to make the bread rise. Would make scones the same way using plain flour, baking soda, a bit of sugar, egg, a couple of tablespoons of sunflower oil and buttermilk. Much lighter scones, nice with butter and jam.

I absolutely love this channel. Hilarious and relaxing, every single time! As for the food, as long as it tastes good, who cares what it looks like? Beautiful doesn't mean tasty! Like those store bought cakes or cupcakes with all the flavor you'd expect of a foam sponge, and dry to boot. I'd take a lopsided one with messy frosting, but some flavor and moisture in it, any day!

Where ever you choose to live for a homestead...you must embrace all kinds of weather the good and the bad. All four seasons. Rain wind shine cold and heat. Because the chores are everyday...in that weather. No matter what else you have going on in your life. They are showing this ...in a lovely way...and positive attitudes...even in the wet and windy. It takes strong people for this. A great visual of real life to build a homestead so far derelict. And bring it back as well as make it your own for your needs on the homestead of today. Añd the women work with their husbands or partners alone or together. And must be able and ...willing..to work independently...to get things done. 😊

Good on you for using your ear defenders, Scott! This means that Katie won't have to yell at you to be heard when you're in your 70s! And now, shall I send you some eye protection? And if you're really going to be completely safe, some shin guards. I don't mean to be a pain, but I have one friend who became completely disabled when he was in his 20s, doing what you're doing. And another who spent months healing from cutting his leg half way to the bone, doing the same. I just don't want that to happen to you! On a different note, the hearth wall is looking SO GOOD! I'm glad it's working better at keeping the house warm. The original builders definitely knew what they were doing. Have a great week!

I’d eat them with some maple syrup. The fireplace wall is looking great!! I know what you mean with the stone radiating heat. We used to have a wood stove and the surrounding bricks would get toasty warm. We have a pellet stove now so the bricks don’t get warm. Funny how you pick up that radio station through the new mics. It's almost impossible to catch the mackerel from where we are situated. We need a boat to go further out to sea. The fish we smoke in a much earlier episode were caught just a little further out from where we are. If it was that easy to catch them from the island we'd be fishing every day. We need a boat!
