Unique vegetable farming from Europe begins with the selection of seeds that are rarely found in Indonesia. Vegetables such as celeriac, kohlrabi, and salsify require special seeds imported from Europe or obtained through seed exchange programs between farmers. Selecting the right seeds is very important because these vegetables have different climate and soil requirements compared to common vegetables. Before being planted, these seeds are usually soaked first to accelerate germination, especially for varieties that have hard seed coats.
After the seeds have germinated, the next stage is planting in specially prepared land. Because these unique vegetables require different soil conditions, the land is often enriched with compost or organic fertilizer to ensure adequate nutrition. For example, salsify and scorzonera require loose, well-drained soil for their tubers to grow properly. The irrigation system is also carefully regulated, considering that some of these vegetables are sensitive to excess moisture that can cause root rot.
During the growing stage, intensive care is the key to success. Farmers must closely monitor the development of the plants, control pests and diseases that may attack them, and ensure adequate lighting. For example, Romanesco, known for its unique spiral shape, requires optimal sunlight and regular fertilization to achieve the perfect shape and color. In addition, proper pruning and weeding techniques are also applied to ensure that the vegetables grow healthily and are free from weed competition.
The final stage in this agricultural process is harvesting and post-harvest. Harvesting is carried out carefully to maintain the quality of the vegetables, considering that many of these vegetables have a fragile structure. Once harvested, vegetables such as chicory and Jerusalem artichoke must be stored immediately in a cool, humid place to maintain their freshness before being sent to the market. Good post-harvest processes ensure that this unique vegetable reaches consumers in the best quality, despite its long journey from European fields to Indonesian dining tables.
