Looks delicious! I wouldn’t be able to handle the richness of that gravy on top, even with the pico. I would go for some green enchilada sauce and a little Mexican white cheese. But it’s all good, a great idea for breakfast! Enjoy your Sunday!

Awesome..how do you like it so far...i love it...the unit together is just fantastic...the grill is great...the insert is great...I actually wish the had a 1/2 griddle....so we could do mushrooms, onions on one side and steaks and burgers on the other...or grilled steak and griddle eggs....

I like corn tortillas better than flour but every time I buy them at the store they fall apart, they are not malleable like the flour. Anyway, these enchiladas you made look great as usual.

Do they fall apart when you try to roll them? Then you need to heat them up in some oil first. If they just plain fall apart, then they are getting old. Use them for migas.

Way too much tomato and not near enough jalapeno and onion for the pico, actually that’s the worst part of pico to me is all of the tomatoes I think there should be half the amount of tomatoes to the jalapeno and onion otherwise awesome looking dish and with a good pice no need for hot sauce

bro, thanks for sharing this. I've been looking for videos of Weber griddle insert for the Genesis 4 burners. hardly any good ones with enough info like yours. i wish you had more though. of all the griddles you use, is Weber not a good choice? i ask because mine is coming this Saturday. the 30+ lb griddle has been sitting in its package waiting for the grill to arrive. after a month of bombarding myself with grilll/griddle videos, i couldn't help but wonder why it is that the new Weber griddle doesn't have the amount of attention that the other brands get. i bought the grill to replace a pre-1997 Weber Spirit given to me by the ex owner of the house. then i learned of the griddle and also got it. now i just wonder if i should've gone with another brand. 😐

@TheFlatTopKing so a little more than a week after I got the Weber E-435, I now realized why it's not the most favored griddle setting. #1, the thing is kinda heavy at 35 lbs, to swap out with the regular bbq grates. #2, which is the most cumbersome for me, is cleaning it every time after cooking on the griddle. I'd do it regardless, but it needs to be cleaned to the extent that the grease is gone from its surface, in order to be stored away. Weber sells a bag, but it's a tight fit. I just can't squeeze a greasy griddle into that bag. can't leave it out in the open either. aside from cleanups being time-consuming, I really enjoy the new grill though. thank you again for showing and sharing these valuable tips. 🙇♂️
