If you are going into international potato stuff check : kluski śląskie. It's kinda gnocchi thing, but bigger, and when done correctly they actually have mochi consistency(gooey, rubbery, smooth). They could also double as a toy too.

I really appreciate the cooking with chopsticks! Once you get used to it you'll find it's so versatile yet delicate. And then you can just use it to eat after and you don't have to wash an extra spatula :)

Downside is the normal sized chopsticks are short enough to put your hands well into steam territory, I bought cooking chopsticks recently and they are extremely long and I finally stopped burning my hands on steam

@@Avendesora my hands are just to small to eat with those monsters (i struggle to hold single serve soda bottles with my baby hands) the nice thing about chopsticks though is if you get to them fast you can basically just wipe them with a soapy cloth rinse them and your done, mine have a nice lacquer coating to help seal them that makes it really easy to clean them as long as I do it immediately

I have to say rice vinegar cannot be used as a replacement for mirin, at least not in this recipe. Mirin is rice syrup, and it’s better to replace it with other syrup or just plain sugar. Just a tip for whoever wants to make it and not have mirin around! Oh man the potato mochi looks so good!

Julien, you should really try the Mumbai Vada Pav. It's spiced massed potato balls covered in gram flour and deep-fried. It's eaten inside a slider like bun with cilantro chutney and a dry chilly peanut powder! It's inherently vegan and really popular in India :))
